Ingredients
1 ready-made deep pie crust
4 large eggs
1/3 cup milk
1/2 shallot
2 slices of bacon, cut into pieces
3 oz of pork sausage
2 green onions, sliced
1 handful of spinach, rough chop
1/4 cup onion, diced
1/4 cup assorted peppers, diced
1 cup shredded cheddar cheese
Scotch Bonnet Hot Sauce ( 2-3 dashes)
Directions
Preheat oven to 400 degrees F. Roll out pie crust, using cast iron pants to make an outline for two. Use extra dough to fill in the cast iron skillets.
In a skillet pan, cook bacon completely and drain on paper towels.
Add sausage to bacon grease, brown and add onion, green onion, peppers, and spinach. Cook for 5 minutes on medium heat.
Evenly divide mixture between both skillets. Crumble bacon on top. Whisk eggs with milk, hot sauce, shredded cheese and pour over both skillets.
Place pie in preheated oven, bake for 30 minutes or until eggs are set and cheese is golden brown.
