Pumpkin Waffles



Yield: 6 Waffles


Ingredients

  • 1 1/2 Cups All-Purpose Flour

  • 1 1/2 t Baking Powder

  • 1 1/2 t Baking Soda

  • 1 T Pumpkin Spice or 1 tsp each of cinnamon, nutmeg, and ginger

  • ½ t Salt

  • 1/2 t of allspice

  • 1 cup canned pumpkin puree

  • 2 eggs

  • 4 T butter, melted

  • 2 drops of Vanilla Extract

  • 1⁄4 Cup of Brown Sugar

  • 1 1/2 Cup of Milk plus extra if needed

  • Maple Syrup

  • Honey roasted pecans for garnish


Directions

  1. Heat your waffle iron.

  2. In a large bowl, whisk together your dry ingredients.

  3. In a medium bowl mix together the pumpkin, eggs, butter, brown sugar, and milk.

  4. Add your wet ingredients slowly to your dry and mix until just combined.

  5. It is a thick batter and if it is too thick add a little more milk.

  6. Pour your mix into a liquid measure for easy pouring.

  7. Pour batter into waffle iron, and cook to your liking.

  8. Top with pecans and syrup.

  9. Enjoy!
