Ingredients
4 Pieces of Salmon
salt & pepper
Tony Creole Seasoning
1 tablespoon Grapeseed oil
2 tablespoons unsalted butter
4 garlic cloves, minced
3/4 cup diced sweet onion
1/3 cup dry white wine
1t red pepper flakes
2 cups cherry tomatoes
1/4 cup of Parmesan cheese.
2 cups baby spinach
1 3/4 cup of Cream
1 tablespoon lemon juice
3T fresh basil, minced
1T fresh Thyme, minced
Directions
Season both sides of salmon with Tony Creole's Seasoning
Heat a large skillet to medium high heat. Add oil and then salmon. Sear salmon for 4-5 minutes per side. Remove from pan and set aside.
Add butter and garlic to the pan an sauté for 40 seconds. Add onions and sauté for 3 minutes.
Add your white wine and deglaze the pan. Then season with salt and peppers.
Add in cherry tomatoes and cook for 4-5 minutes.
Add in spinach and sauté until wilted down.
Pour in the cream. Stir and simmer for 3-4 minutes. Add parmesan cheese.
Then add lemon juice and fresh herbs. Stir to combine.
Place the salmon back in the pan and simmer for 5-8 minutes.
