Yield:10 Fritters
Ingredients
4 medium zucchini, Shredded
1 large Red Pepper, Diced
1 T of Red Pepper Flakes
1 t of Onion Powder
1/2 T of Garlic Powder
1 T of McCormick's Vegetable Seasoning
3/4 cup of all-purpose flour
2 large eggs (beaten)
1/2 cup shredded Parmesan
Olive oil
Directions
Shred your zucchini. Salt and let it sit about ten minutes to draw out the moisture from the zucchini. Drain and wring with a thin cloth.
Cut your red pepper in a medium dice. You could mince the pepper if you desire.
In a large bowl combine, zucchini, pepper, cheese, eggs, flour, vegetable seasoning, onion powder, garlic powder, and red pepper flakes.
Add 4 T of olive oil to a large nonstick skillet. Get your pan to a nice sizzle heat. Use your 1/4 measure to scoop batter and place in the skillet.
Press down on the fritter and cook 3-4 minutes on each side or until see a nice brown color on each fritter. Don't over crowd your skillet.
Serve your fritters warm with your favorite brand of marinara sauce.
